You won't find a bigger proponent of this idea than former chef, and Founder of Moody Tongue Brewing Company, Jared Rouben. Cutting his teeth in the kitchens of New York and Napa Valley, and the brew houses at Rock Bottom and Goose Island Clybourn, Jared brings a unique perspective to Chicago beer. We sat down with Jared in their rapidly expanding Pilsen brewery to find out what drives their approach to some of the most unique beers seen in Chicago yet.
