A Like Minded Chat with Chicago's Newest Brewery

There are a lot of archaic beer laws around the United States, and most of them do nothing good for the craft beer industry. The state of Wisconsin is no exception with their controversial "Tied House" laws (other states including Illinois have similar laws), enacted shortly after Prohibition ended. Originally intended to protect small brewers being forced out of bars by the big guys, the aging law now has the exact opposite effect. Earlier this year, word spread that Like Minds Brewing, one of the state's most promising new brewers, had been forced to find new digs in Chicago.

As it is at any brewery, there's no position more important than Brewmaster. At a brewery as big as Goose Island, the job of Brewmaster comes with even more responsibility and a constant magnifying glass on every decision made. The man making those decisions for Goose today is Jared Jankoski, former Head Brewer at New Glarus, now leading one of the most talented brewing teams in the industry. We sat down with the fourth Goose Island Brewmaster to dig into his past, present responsibilities, why he doesn't always like Goose Island alumni breweries, and even the name of his 'famous' cat.

WICKER PARK, CHICAGO

If you're familiar with Chicago's Wicker Park, then you're probably aware that Piece Brewery & Pizzeria is a neighborhood institution. In fact, you could argue Piece is spreading it's influence plenty outside the North Side. It's built a bit of a reputation. Not just as one of the best pizza joints in the country (proof here), but as home to some of the highest-regarded brews in the nation (we're not kidding). They've got the fanfare, and hardware, to prove it. What you might not know is exactly how brewer, Jonathan Cutler, came to find his home at the brewpub over a decade ago. Nor how incredibly affable and humble this guy is. We sat down to share a few pints with Cutler and discuss the globetrotting that got him here.
