Over drinks at old city standbys and countless dive bars, the two decided to turn a career in computer engineering into the foundations of what would become Lo Rez Brewing. At their nearly open taproom in Pilsen, we paid a visit to discuss their story.

As hand-crafted beer continues to diversify and mature, we're starting to see more breweries cater to a different type of drinker. Great beer and food have always been quite the pair, something that people everywhere are starting to remember. You won't find a bigger proponent of this idea than former chef, and Founder of Moody Tongue Brewing Company, Jared Rouben. Cutting his teeth in the kitchens of New York and Napa Valley, and the brew houses at Rock Bottom and Goose Island Clybourn, Jared brings a unique perspective to Chicago beer. We sat down with Jared in their rapidly expanding Pilsen brewery to find out what drives their approach to some of the most unique beers seen in Chicago yet.

MILLER BEACH, IN

18th Street Brewery is hedging a bet. A bet that you'll take an afternoon to hop on the South Shore Line to Indiana to try out their beer. Located in Miller Beach, a small lake side town East of Gary, it's probably not a place that's high on most Chicagoans' list of places to visit. Many of us know Gary as a town that's seen brighter days. A town with a rich history long lost in the decay of a struggling industry.

Drew Fox and 18th Street Brewery want to change that image. The brewery, originally funded through Kickstarter, has blossomed into reality and plans on opening it's doors later this week. We stopped into the, at the time, still under construction brewery and tap room to talk shop. What we found was a man passionate about his city, his new business, and most of all, the beer he brews.
