Of the nearly 90,000 to have gained some level of Cicerone Program certification, only 13 have reached its pinnacle. Known as Master Cicerones, these select few have proven themselves to be veritable walking encyclopedias of beer knowledge. One of the 13 is Jason Pratt, Senior Manager of Innovations at Tenth & Blake Beer Co., the craft division of MillerCoors.

Warm and flat, the way beer should be. While that statement contradicts every beer commercial on television for the last 40 years, there is art and craftsmanship in cask or 'real' beer. Cask beer can also be very delicate and temperamental, therefore it should only be handled by someone with experience and passion for the unadulterated ale. That someone in this case is Elliott Beier of Logan Square's Owen & Engine. As one of the earliest Certified Cicerones, Elliott maintains one of the best cask beer programs in the country. We sat down for beers and to discuss his role in one of Chicago's upcoming Bixi Brewery.

On the list of Chicago craft beer bars where you might find The Hop Review perched at the bar, Lakeview's Paddy Long's and the West Loop's Kaiser Tiger are damn near the top. Both establishments offer a completely different atmosphere with the former being your classic neighborhood Irish joint; the latter oozing a sophisticated beer garden feel. Both places have something in common – a whole lotta bacon and a fantastic beer list chock full of quality, often hard to come by brews. They also happen to be co-owned and lovingly curated by Pat Berger: respected beer judge, bar owner, blogger, and Chicagoan through and through.
