It's not every day you drink a beer with a legend. This was the opportunity that fell to us when we sat down with coach Mike Ditka. But what does this have to do with beer you ask? If you're a beer fan, you already know about the explosive growth of the craft industry. But often overlooked amidst the bevy of beverage options available is the craft cider, beer's apple-centric distant cousin. A long-time favorite of drinkers in northern Europe, cider is making quite the comeback in the United States, growing by leaps and bounds in recent years. And first on the Chicago scene is Broken Nose Cider Company, currently being made at Begyle Brewing. Founder Paul Cade has brought dry, European-style cider to the Windy City. One thing's for sure — this is unlike any cider we've had before–and that's a great thing.

Brewing Collaborations with Cleetus Friedman

RAVENSWOOD, CHICAGO

Think of one word that describes the local brewery scene...go ahead, we'll wait. For us, we just might go with "collaborative". We've sat down with nearly 40 Chicagoland beer industry folk, and virtually all of them have spoken to how the local industry is unwaveringly helpful, communal, and always willing to collaborate on everything from sharing brewery space to whipping up their next beer. We sat down with one of the industry's most collaborative, Fountainhead Chef, Cleetus Friedman, to talk what it takes to stay inventive.
